Honduran Inspired Chicken Soup

Ingredients

  • 2 tbsp. canola oil
  • 3 cloves garlic, crushed
  • 1 large yellow onion, minced
  • 1 large tomato, finely chopped
  • 10 cups chicken stock
  • 8 sprigs cilantro
  • whole chicken
  • yucca root (or 3 large red potatoes) in 1 inch chunks
  • 3 medium carrots, peeled and sliced
  • 2 oz. spaghetti, broken in half
  • Half cabbage chopped into 2 inch sections
  • salt and pepper, to taste

Directions

  1. Heat oil in an 8-qt. saucepan over medium heat
  2. Add garlic, onions, and tomatoes; cook until soft, about 8 minutes.
  3. Add stock, cilantro, whole chicken; cook for 20 minutes.
  4. Remove and shred chicken, discarding bones and fat.
  5. Add potatoes, carrots, salt and pepper to taste; cook until everything tender, about 25 minutes.
  6. Add chicken along with spaghetti and cabbage. Cook until pasta is al dente, about 8 minutes.
