Golden Ticket Papa a la Huancaina

Ingredients

  • 3 medium-large gold potatoes (boiled and peeled)
  • 1/2 cup queso fresco
  • 1 cup evaporated millk (can)
  • 1/4 large onion (diced)
  • 1/4 teaspoon minced garlic
  • 1 carrot (boiled)
  • 2 eggs (boiled)
  • 1 packet of soda crakers (10 crackers)
  • 1 orange long spicy pepper

Directions

  1. Add potatoes into a large pot and cover with salted water. Boil the potatoes. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and set aside to cool slightly.
  2. Heat olive oil in a pan at medium heat and cook onion with garlic for 5 minutes.
  3. Bring a small saucepan of water to a boil. Boil pepper until soft, about 5 minutes. Run pepper under cold water to cool until cool enough to handle; remove and discard skins and veins.
  4. Bring another small saucepan of water to a boil. Boil carrot until soft, about 5 minutes
  5. Blend onions, pepper, cheese, salt, pepper, carrot, 1/2 cup of evaporated milk and half of a packet of soda crackers (5 crackers) in a blender until smooth.
  6. Add the rest of evaporated milk and soda crackers into the blended mixture while continuing to blend until a creamy sauce is achieved.
  7. Serve potatoes and pour huancaina on the top of it.
  8. Arrange 1 lettuce leaf onto each plate and top it with an egg half and two black olive halves (optional).
